Welcome to Taco Tuesday, where we're turning up the flavor with our mouthwatering Vegetarian Sweet Potato Tacos! This easy-to-follow recipe combines the hearty goodness of sweet potatoes with a medley of fresh veggies, zesty spices, and a dollop of creamy crema, all wrapped up in warm flour tortillas. And what better way to prepare and present these delectable tacos than with our versatile 3-piece Bamboo Cutting Board Set?


Ingredients:

  • 3 sweet potatoes

  • 1 medium red onion

  • 1 medium red bell pepper

  • 2 Roma tomatoes

  • 2 tsp cilantro

  • 1 lime

  • 1 jalapeno

  • ¼ cup sour cream

  • 6 flour tortillas

  • Dairy-free shredded cheese (optional)

  • 1 tbsp + 1 tsp taco seasoning (such as Mateo's)

  • Salt

  • Pepper

  • Olive oil

Instructions:

  1. Preparation: Preheat your oven to 425°F. Clean all produce and pat dry.

  2. Roasted Sweet Potatoes: Peel and cut the sweet potatoes into wedges using your large cutting board. Toss them in a bowl with 1 tbsp of taco seasoning, salt, pepper, and olive oil. Arrange the wedges on one side of a large baking sheet covered with parchment paper and bake for 10 minutes.

  3. Grilled Veggies: Using the same board, thinly slice ¾ of the red onion and the red bell pepper. Toss them with 1 tsp of taco seasoning, salt, and pepper in the same bowl used to season the potatoes. After the potatoes have baked for 10 minutes, add the veggie mix to the other side of the baking sheet and bake for an additional 12-15 minutes.

  4. Pico de Gallo: Using your Small Bamboo Cutting Board, dice the tomatoes, remaining red onion, cilantro, and jalapeno. Toss them with lime juice of 1/2 of the lime, salt, and pepper in a small bowl. Set aside.

  5. Crema: In another bowl, mix sour cream with lime juice of the other 1/2 of lime and add cold water 1 tsp at a time until reaching a pour consistency or to your desired consistency. Season with salt and pepper.

  6. Assemble Tacos: Wrap tortillas in a damp paper towel and microwave for 30 seconds. Using your Medium Bamboo Cutting Board, assemble tacos by filling each tortilla with roasted sweet potato wedges, grilled veggies, Pico de Gallo, and crema. Add dairy-free shredded cheese if desired.
